Jester King 100° is a vibrant, sessionable Saison designed for the Texas heat, offering a rustic profile defined by San Jacinto Heritage Malt and Denton County Wheat Malt. The aroma is a bright bouquet of fresh lemon peel and spicy ginger root, supported by the earthy, floral nuances of organic Perle hops. Fermentation with native yeast provides a subtle, dry funk and complex acidity that integrates seamlessly with the citrus-forward profile. This farmhouse ale captures a refreshing Shandy-like spirit, delivering a highly attenuated, crisp finish with a lingering effervescence and a delicate, spicy ginger bite.
Appearance. Pours a hazy, pale straw color (3-4 SRM) with a voluminous, rocky white head that displays excellent persistence and dense Belgian lacing. High effervescence is visible through the slight yeast haze.
Aroma. High intensity aromatics featuring prominent fresh lemon zest and a sharp, spicy ginger kick. Beneath the adjuncts, the native yeast contributes peppery phenols and a light, earthy funk. The malt character is rustic and grainy, reminiscent of raw wheat and crackers, while organic Perle hops add a faint floral and herbal backdrop.
Taste. The palate leads with a crisp, tart lemon citrus and a warming ginger spice that is well-integrated rather than overwhelming. The San Jacinto Heritage Malt provides a soft, bready foundation. Bitterness is moderate but perceived as firm due to the exceptionally dry finish and high attenuation. Notes of white pepper and a faint, wild yeast tartness linger into a clean, refreshing aftertaste.
Mouthfeel. Light-bodied with a very high, prickly carbonation that creates a refreshing, effervescent sensation. There is no alcohol warmth. The presence of Denton County Wheat Malt provides a subtle, smoothing creaminess that balances the sharp carbonation and ginger bite.
