This decadent Imperial Stout presents a profound sensory journey, shaped by a seventeen-month residency in bourbon barrels. The visual weight is matched by an aromatic profile defined by intense dark chocolate, espresso, and vanilla, further complicated by the addition of toasted sesame seeds and Szechuan peppercorns. These ingredients introduce an exotic, nutty depth and a delicate floral lift that cuts through the base beer's rich maltiness. Appearance. Jet black and completely opaque (40+ SRM). Pours with a dense, creamy, deep tan head with moderate retention and significant lacing. High viscosity is evidenced by thick legs on the glass.
Aroma. High intensity with a complex blend of dark chocolate, espresso, and black licorice. The bourbon barrel contributes strong vanilla, toasted oak, and light coconut. Toasted sesame seeds provide a distinct nutty character, while Szechuan peppercorns add a unique floral note. Low to moderate esters of dried plums and raisins are present.
Taste. Intense flavors of bittersweet chocolate, heavy roast, and molasses. The bourbon barrel aging provides caramel and charred wood notes. Toasted sesame adds a savory, earthy nuttiness that integrates with the dark grains. Szechuan peppercorns offer a floral dimension and a very subtle spice tingle. Bitterness is firm but balanced by the massive malt body. The finish is long, warming, and bittersweet with lingering oak.
Mouthfeel. Very full-bodied, chewy, and viscous with a luscious, velvety texture. Carbonation is low to moderate. A strong, smooth, and well-integrated alcohol warmth is prominent throughout the palate.
