Fermented with Saison yeast and Brettanomyces, then matured for nine months in oak wine barrels, it presents an elegant, layered sensory profile. The second-use raspberries contribute a delicate, floral berry essence rather than heavy syrup, mingling with funkier notes of leather and hay. A soft, grainy malt backbone supports the wild fermentation’s bright acidity and exceptionally dry finish.
