Beyond the Moat is a monumental Imperial Stout that showcases a masterclass in barrel integration and malt complexity. Born from a collaboration with Bissell Brothers, this powerhouse features a sophisticated blend of European caramel and chocolate malts, resulting in a dense tapestry of bittersweet cocoa, toasted toffee, and singed molasses. Having rested for twenty months in a duality of California grape brandy and Kentucky bourbon barrels, the beer reveals layers of dark stone fruit, sun-dried raisins, and a refined oak spice. The brandy influence adds a vinous elegance that rounds out the robust bourbon-soaked vanilla and char, culminating in a velvety, warming finish that lingers with decadent roasted grain and spirit-forward depth.
Appearance. Jet black and completely opaque (40+ SRM). Pours with a thick, deep tan head that shows moderate retention and leaves significant lacing on the glass. High viscosity is evident through heavy legs when swirled.
Aroma. High intensity and deeply complex. Strong notes of dark chocolate, espresso, and black licorice are layered over rich caramel and toffee. Esters of raisins, figs, and dried plums are prominent, complemented by barrel-derived vanilla, toasted oak, and a distinct vinous brandy character. A smooth, clean alcohol presence is noticeable without being solventy.
Taste. Intense and multi-layered, beginning with bittersweet chocolate and heavily roasted grain. The mid-palate introduces toasted bread, caramel, and dark fruit flavors of prune and black currant. Firm bitterness (estimated 60-80 IBU) provides a necessary counterpoint to the malt sweetness. The finish is long and warming, showcasing a harmonious blend of charred bourbon oak, grape spirit, and lingering cocoa.
Mouthfeel. Full-bodied, thick, and velvety with a luscious, chewy texture. Carbonation is low to moderate, enhancing the beer's weight. A significant, smooth alcohol warmth is present, reflecting the high gravity without any harsh astringency.
