Livelihood is an exceptionally refreshing session-strength Saison, presenting a delicate balance of rustic grains and bright acidity. The foundation of Pilsner malt and unmalted white wheat provides a soft, grainy cracker base, while German hops contribute subtle floral and earthy nuances. Fermented with a proprietary saison blend and bottle-conditioned for six months, it exhibits a nuanced fermentation profile featuring citrusy esters and a hint of cracked black pepper. Despite its low alcohol content, the beer offers significant sensory depth, leading with a clean, lactic tartness that finishes bone-dry and effervescent, epitomizing the Grisette tradition of being infinitely crushable yet complex.
Appearance. Pale straw to light gold (approx. 3-4 SRM). Hazy appearance due to the high proportion of unmalted white wheat and being unfiltered. Supports a voluminous, rocky white head with excellent retention and significant Belgian lacing. Highly effervescent with visible rising bubbles.
Aroma. A bright, aromatic profile of citrus zest and green apple esters. Moderate spicy yeast character reminiscent of black pepper and coriander. Floral and herbal notes from German hops are evident but secondary. The Pilsner malt provides a light, grainy-sweet backdrop, complemented by a subtle, clean lactic sourness from the extended bottle conditioning.
Taste. Initial impression is one of crisp acidity and refreshing tartness. The flavor follows the aroma with lemon-like fruitiness and distinct spicy phenolics. The unmalted white wheat lends a soft, bready quality that balances the dryness. Hop flavor is low, leaning toward earthy and floral. Bitterness is low, as the mild sourness provides the necessary structural balance. Finishes extremely dry and clean with a lingering, zesty aftertaste.
Mouthfeel. Light body with a crisp, refreshing texture. Very high carbonation creates a lively, prickly effervescence on the tongue. No alcohol warmth is perceived given the low 3% ABV. Highly attenuated with no residual sweetness or astringency, providing a very high drinkability factor.
