This petite Saison presents a delicate yet complex profile, defined by its sessionable strength and unique botanical infusions. Foraged red bud flowers offer a soft, floral elegance that intertwines with the subtle, earthy depth of beets. A mixed fermentation process introduces a bright, tangy acidity and a whisper of rustic funk, characteristic of a farmhouse ale. The aroma is a fragrant bouquet of citrusy esters and floral notes, while the palate remains exceptionally dry and effervescent. It is a refreshing, highly attenuated ale that balances wild fermentation character with the grounded, terroir-driven influence of local ingredients.
Appearance. Pours a unique pale pinkish-gold to light copper hue, influenced by the beets, with a slight haze from the mixed fermentation and botanical additions. It supports a long-lasting, dense, rocky white head that leaves delicate Belgian lace.
Aroma. Moderate to high intensity featuring a mix of citrusy yeast esters, floral red bud blossoms, and a distinctive earthy beet undertone. The mixed fermentation provides a light lactic tartness and subtle farmhouse funk. Hop character is low and floral, complementing the botanicals without overwhelming the grainy malt scent.
