Core Values is a sophisticated Straight Sour Beer that masterfully integrates rustic ingredients with refined barrel aging. A vibrant, clean lactic sourness defines the experience, beautifully layered with the crisp, tart character of local apples and a distinct earthy peppery note from the rye. Influence from wine barrel aging introduces a soft minerality and structural dryness, while the bottle conditioning with Ohio Wildflower honey provides delicate floral aromatics without cloying sweetness. The result is a pale, effervescent, and highly refreshing ale where the orchard fruit, honey, and spice harmoniously converge over a light, crackery malt base.
Appearance. Pale straw to light gold (3-4 SRM). Generally clear to slight haze with high effervescence. Forms a large, dense white head with moderate to low retention.
Aroma. Moderately high intensity with a sharp, clean lactic character. Prominent notes of tart green apple and floral Ohio Wildflower honey are supported by a faint, peppery rye spice. Pale malt presents as biscuity or crackery, with a very subtle vinous oak note from the wine barrels. No hop aroma.
Taste. Initial impression is a sharp, lemony, and clean lactic acidity. Tart apple fruitiness follows, balanced by a light, grainy malt profile and a touch of spicy rye. Hop bitterness is undetectable, allowing the acidity to provide structure. The finish is bone-dry and crisp, leaving a lingering mineral sensation and a faint floral honey aftertaste. No hop flavor.
Mouthfeel. Medium-light body with high, prickly carbonation that enhances the refreshing acidity. Alcohol warmth is very low and well-integrated. Crisp and lively on the palate with no significant astringency.
