Jaanihanso Été is an elegant, refreshing Estonian Specialty Cider crafted using the traditional champagne method. It presents a sophisticated sensory profile where the sharp, zesty acidity of rhubarbs meets the crisp, clean structure of summer apples. Blackcurrants impart a subtle earthy depth and a vibrant berry character, while the secondary fermentation in the bottle creates a fine, persistent mousse. The profile is intentionally dry and lean, avoiding excessive sugar to allow the natural tartness of the fruit and the delicate vinous nuances of the lees aging to shine through, capturing the essence of a bright northern summer evening.
Appearance. A brilliant, clear rose-petal pink with soft salmon hues (SRM 4-6). Displays a vigorous, fine-beaded effervescence that forms a delicate, pale pink mousse with excellent persistence.
Aroma. High intensity with a bouquet of fresh, tart rhubarb and crisp green apple. Secondary notes of earthy blackcurrant skins and a faint, clean floral note are present. A very subtle hint of brioche or yeast autolysis from the champagne method adds complexity to the fruit-forward profile.
Taste. The initial impression is brightly acidic and bone-dry. Tart rhubarb and tangy summer apples dominate the mid-palate, complemented by the slightly tannic and dark fruit presence of blackcurrants. It features a high level of acidity that is well-balanced by the fruit extract rather than residual sugar. The finish is remarkably clean, crisp, and lingering, with a refreshing tartness and a mineral-like quality.
Mouthfeel. Medium-light body with a lively, prickly high carbonation that creates a creamy mousse-like texture. Very low astringency from the fruit skins and a mild, well-integrated alcohol warmth that enhances the dry finish.
