Levain 2022 Blend is a masterful Saison that bridges rustic tradition with complex microflora. The addition of raw spelt provides a soft, grainy foundation for a fermentation profile driven by house yeast, Brettanomyces, and sourdough microorganisms. Intense aromatics of limeade, lemon zest, and tropical lychee mingle with the wilder nuances of musky leather, earthy blue cheese, and wet hay. Aged whole cone hops contribute a subtle earthiness rather than bitterness. On the palate, a spry acidity highlights notes of papaya, mango, and pink starburst, balanced by a touch of oaky vanillin from its time in used wine barrels. The finish is exceptionally dry, complex, and refreshing.
Appearance. Pale straw to light gold (4–6 SRM). Slight haze from raw spelt and unfiltered fermentation. Large, frothy white head with excellent retention and delicate Belgian lacing. Highly effervescent.
Aroma. High intensity. Complex bouquet of funky Brettanomyces (wet hay, leather, mild blue cheese) layered over bright citrus notes of lime zest and black cherry. Soft, grainy malt from the raw spelt provides a rustic backdrop. Faint oaky spice and vanillin from barrel aging.
Taste. Initial sharp tartness resembling limeade and lemon zest. Mid-palate reveals exotic fruit flavors of lychee, mango, and papaya with a hint of pink starburst candy. Very low hop bitterness, allowing the sourdough-derived acidity to lead the balance. Bone-dry finish with lingering notes of earthy funk and soft oak tannins.
Mouthfeel. Medium-light body with a crisp, spry texture. High carbonation creates a lively, prickly effervescence. Noticeable but pleasant lactic acidity; low alcohol warmth at 5.5% ABV. Minimal astringency despite oak contact.
