Appearance. Pale straw (2-3 SRM). Brilliant clarity with a slight haze from hop oils. Dense, white head with poor retention, typical of high-acid styles.
Aroma. Moderately-high intensity of clean lactic sourness. Prominent apricot and peach aromatics driven by Ernest hops, supported by subtle lemony esters. Background notes of crackery and biscuity pale malt.
Taste. Sharp, clean lactic sourness leads the palate. Mid-palate reveals refreshing apricot and tart apple notes from the Ernest hops. Very low bitterness is nearly undetectable. Grainy, bready malt provides a thin foundation. Finish is crisp, dry, and highly acidic without being vinegary.
Mouthfeel. Light body with a refreshing, crisp acidity. Moderate to high carbonation provides an effervescent prickle on the tongue. No alcohol warmth.
