This complex Brett Beer highlights a masterful blend of one, two, and three-year-old Danish Wild Ales, resulting in a sophisticated balance of aged character and vibrant freshness. Racked onto an impressive 600 grams per liter of Bergeron apricots, the profile is defined by an intense, nectar-like stone fruit fragrance. The maturation in Chardonnay and Monbazillac barrels imparts elegant layers of white wine, honeyed oak, and a vinous depth that complements the wild fermentation's earthy funk. The result is a soft, juicy, and profoundly aromatic experience that captures the essence of summer through a dry, expressive, and fruit-forward lens.

Appearance. Deep gold to hazy apricot-orange in color (SRM 7-9). Features a moderate white head with fair retention that settles into a fine collar; slight haze is present due to the heavy fruit maceration.

Aroma. High intensity aromatics of sun-ripened Bergeron apricots dominate, supported by complex Brettanomyces traits of hay, dusty earth, and aged leather. Subtle notes of honey, white grape, and floral oak emerge from the Chardonnay and Monbazillac barrel aging.

Taste. An initial burst of juicy, fleshy apricot leads into a dry and highly attenuated finish. Low malt presence allows the stone fruit and wild fermentation esters to shine. Moderate funk and light, non-lactic acidity provide complexity, while the barrels contribute soft tannins and a hint of dessert wine sweetness without the residual sugar. The bitterness is very low, finishing clean and fruity.

Mouthfeel. Medium-light body with a soft, supple texture from the fruit maceration. Carbonation is moderate to high, providing a bright, lively effervescence. Alcohol warmth is very low and well-integrated; the finish is crisp with a slight tannic grip.
