The two-year barrel aging infuses the blend with nuanced threads of toasted coconut, soft caramel, and a touch of citrus, providing a warm contrast to the bright acidity. The addition of Frederiksdal Estate Stevnsbær cherries delivers deep, concentrated dark fruit layers and a distinct marzipan character. This vintage blend presents a complex interplay of funky wild fermentation, vanillin-rich wood, and tart stone fruit, culminating in a dry, exquisitely layered sensory experience.
Appearance. Deep ruby-red to mahogany with a slight haze. A thin, pink-tinted head forms quickly but shows low retention, characteristic of the style's acidity, leaving minimal lacing.
Aroma. High intensity aromatics featuring sharp, tart cherry and deep marzipan notes. Complex wild fermentation esters provide a funky backdrop of leather and hay, while the Barbados rum barrels contribute secondary notes of toasted coconut, caramel, and a faint citrus zest.
