This refined Brett Beer showcases a sophisticated marriage between funky Danish Wild Ale and the oxidative elegance of Oloroso Sherry. The two-year maturation in a massive chestnut wood Bocoy cask, supplemented by traditional oak, imparts a complex array of toasted walnuts and warm spices. On the palate, expect a bone-dry finish characteristic of prolonged Brettanomyces activity, layered with deep, caramelized fruit notes such as dates and raisins. Earthy barnyard and wet hay nuances provide a rustic counterpoint to the refined, vinous qualities of the Oloroso cask, resulting in a deeply contemplative and highly attenuated experience.
Appearance. Deep gold to rich amber (10–14 SRM). Clear to slightly hazy with a fine, light-tan head that dissipates fairly quickly, leaving a thin collar and minimal lacing.
Aroma. High intensity. Prominent Oloroso sherry notes of toasted walnut and light oxidation are intertwined with earthy Brettanomyces funk, suggesting wet hay and leather. Secondary aromas of caramelized stone fruit and a subtle, woody spiciness from the chestnut cask.
Taste. Initial impression of bone-dry attenuation followed by complex layers of toasted walnut and dark, caramelized fruit. The hop bitterness is low, allowing the earthy, barnyard Brett character and wood-derived spices to lead. Finishes very dry and clean with a lingering, nutty, and slightly vinous aftertaste.
Mouthfeel. Medium-light body with high, sparkling carbonation. A subtle, well-integrated alcohol warmth is present alongside a faint, pleasant wood tannin and mild astringency from the extended aging in chestnut and oak.
