This Hazy IPA is a modern masterclass in biotransformation, utilizing WHC Labs' Thiol Theory yeast to unlock intense tropical aromas. The hop profile is a complex layering of Saaz, Columbus, Cascade, Citra, and Nelson Sauvin. While Saaz and Columbus provide a foundational herbal spice and resin, the Citra and Cascade drive vibrant grapefruit and lime citrus notes. The standout feature is the thiol-driven explosion of passion fruit and guava, further augmented by the signature white grape character of Nelson Sauvin. A soft, grainy malt base supports the juice-forward profile, resulting in a luscious, opaque pour that prioritizes fruit-saturated depth over sharp bitterness.
Appearance. Color is a pale straw to light gold (4-5 SRM) with a deep, opaque haze that provides a characteristic shine. It is topped by a dense, rocky, meringue-like white head with excellent retention and thick lacing.
Aroma. High intensity hop aroma dominated by tropical fruit precursors including passion fruit, guava, and gooseberry. Secondary notes of grapefruit, lime, and a hint of herbal spice appear over a clean, neutral, and lightly bready malt backbone. Fermentation character is clean and supportive of the massive fruit profile.
Taste. Initial impression is an explosion of tropical juice, featuring mango, guava, and sweet citrus. The malt flavor is low, providing a simple bready, grainy foundation. Hop bitterness is medium-low and smooth, never harsh, allowing the juicy hop character to lead into a soft, off-dry finish. Aftertaste lingers with notes of white grape and citrus peel.
Mouthfeel. Medium-full body with a notably soft, plush, and smooth texture. Carbonation is moderate. There is no astringency or hop burn, and only a very light, well-integrated alcohol warmth is present.
