Independent House Knock Out is a powerhouse Double IPA that showcases an assertive hop profile driven by a heavy double dry-hop addition of El Dorado and Idaho 7. The sensory journey begins with an explosive aroma of tropical pineapple, ripe mango, and stone fruit, underscored by a subtle resinous pine. On the palate, the El Dorado provides luscious fruit depth while Idaho 7 contributes zesty citrus and apricot notes. A lean, neutral malt base ensures the intense, firm bitterness remains the focus, finishing crisp and dry. At 8% ABV, it delivers a smooth, integrated warmth that complements its bold, hop-saturated character without sacrificing drinkability.
Appearance. Deep gold to pale orange (approx. 8 SRM). Features a moderate-sized, persistent off-white head with good lacing. Displays a slight haze consistent with a double dry-hopped profile, though it remains largely translucent.
Aroma. High intensity hop aroma dominated by El Dorado and Idaho 7. Pronounced notes of pineapple, tropical fruit, and apricot are layered over a background of resinous pine and light citrus zest. Low, neutral grainy malt support with a clean fermentation profile and a hint of smooth alcohol.
Taste. Initial impression is an explosion of tropical and stone fruit flavors. Hop character is complex, featuring mango, peach, and citrus. Malt flavor is low and unobtrusive, providing a soft grainy foundation. Bitterness is firm and assertive but clean and lacking harshness. Finishes dry with a lingering hoppy and resinous aftertaste.
Mouthfeel. Medium body with a smooth, velvety texture. Carbonation is medium-high, providing a crisp bite that lightens the palate. Contains a noticeable but restrained and smooth alcohol warmth appropriate for its 8% strength.
