Unleash the Beast is a striking interpretation of a Berliner Weisse, amplified by a significant addition of blackberries. The sensory experience begins with an intense lactic tartness on the nose, quickly layered with the jammy, floral perfume of dark bramble fruit. On the palate, the sharp acidity is tempered by a soft, doughy foundation of wheat malt and Pilsner malt, though the fruit remains the protagonist. Bracingly tart and highly effervescent, it dances across the tongue with a lively carbonation that accentuates the blackberry's natural zing. The finish is exceptionally dry, leaving a clean, mouth-watering impression of wild berries and sourdough.
Appearance. Hazy, deep magenta to vibrant purple due to the blackberry addition; features a frothy, pink-tinted head with poor to moderate retention and high effervescence.
Aroma. High intensity lactic sourness is at the forefront, followed by a concentrated blackberry character reminiscent of fresh fruit and tart berry skins. The malt provides a faint background of raw bread dough and sourdough; no hop aroma is present.
Taste. Initial impression is a bracing, clean lactic tartness. Rich blackberry flavor follows, providing a tart fruitiness that melds with a subtle, grainy wheat malt backbone. Hop bitterness is undetectable, as acidity provides the balance, leading to a bone-dry, crisp finish.
Mouthfeel. Medium-light body with very high, spritzy carbonation. The acidity is crisp and mouth-watering; despite the 5.5% ABV, there is only a light alcohol warmth, feeling more substantial than traditional low-gravity examples.
