This Wild Specialty Beer is a visually striking smoothie-style sour, defined by its unconventional deep navy-blue hue and thick, viscous texture. The sensory experience is dominated by an intense, jammy melange of tart raspberry and earthy, sweet boysenberry. A unique addition of blue cookie ice cream imparts a creamy, vanilla-forward richness that softens the lactic acidity, creating a profile reminiscent of a liquefied berry dessert. While the wild fermentation provides a foundational brightness, the focus remains on the dense fruit puree and decadent dairy-like sweetness, resulting in a bold, contemporary interpretation of the style that prioritizes a lush, fruit-heavy palate.

Appearance. Opaque and turbid with a very dark, deep navy-blue color; features a thick, dense head with a noticeable blue tint and persistent lacing that clings to the glass.

Aroma. High intensity aromatics of fresh raspberry jam and ripe boysenberries; secondary notes of sweet vanilla, cream, and a hint of baked sugar from the cookie ice cream, backed by a clean, lactic tartness.

Taste. Initial impression is a burst of tart red and black berries followed by a rich, sweet mid-palate of vanilla cream; the raspberry provides a bright acidity while the boysenberry adds depth. The finish is lingering and sweet with a soft, yogurty tang; hop bitterness is absent, allowing the fruit and specialty adjuncts to dominate.
