This Raspberry Colada variant of the Schmoojee series is an indulgent Wild Specialty Beer that prioritizes a lush, dessert-like sensory profile. It presents an opaque, smoothie-like consistency with a vibrant raspberry-pink hue. The aroma is dominated by high-intensity notes of jammy red raspberry and bright, tropical pineapple, smoothed over by a rich, island-inspired coconut character and creamy lactose. On the palate, the sweetness of the fruit and unfermented sugars is balanced by a soft lactic tartness. The mouthfeel is exceptionally full and viscous, finishing with a lingering, creamy tropical fruit medley that masks the moderate alcohol presence.
Appearance. Opaque and smoothie-like with a deep reddish-pink color (20+ SRM). Features a thick, frothy, pink-tinted head with heavy lacing and moderate retention despite the high fruit oil content.
Aroma. High intensity aromatics of fresh raspberry purée and pungent, ripe pineapple. Strong secondary notes of sweet coconut and vanilla-like lactose creaminess. Very low funky fermentation character, with a clean, mild lactic tartness.
Taste. Initial impression is a burst of sweet raspberry and acidic pineapple. Malt flavor is negligible, hidden behind heavy fruit solids and lactose sweetness. Hop bitterness is absent (0 IBU). The finish is long and sweet with coconut cream and lingering berry tartness, displaying high complexity through its fruit and adjunct layers.
Mouthfeel. Full-bodied and highly viscous with a thick, creamy texture derived from lactose and fruit pulp. Carbonation is moderate to help lift the heavy weight of the liquid. No perceived astringency and very low alcohol warmth.
