This Wild Specialty Beer, inspired by the pale imagery of the White Horse, presents a striking sensory journey through the complexities of mixed-culture fermentation. Dominated by a sharp, lactic acidity and the rustic, earthy funk of Brettanomyces, it offers an aromatic profile of lemon zest, damp hay, and white grape. The palate is defined by a bright, vinous character with notes of green apple and a hint of stone fruit, providing a high-acid contrast that cuts through the richness of its suggested dark chocolate pairing. Effervescent and bone-dry, it concludes with a clean, puckering finish that reflects its bold, conquering spirit.
Appearance. Pale straw color (3-4 SRM) with a slight, persistent haze. Features a thin, bright white head with moderate to low retention and minimal lacing, typical of high-acidity wild ales.
Aroma. High intensity with a clear, sharp lactic tartness. Complex notes of leather and barnyard funk are layered over lemon curd, white peach, and a subtle, spicy phenolic edge from the wild yeast.
Taste. Initial impression is sharply tart and refreshing. Flavors of underripe plum, citrus zest, and a very lean, crackery malt backbone emerge. Minimal hop bitterness allows the acidity to lead, finishing bone-dry with a lingering, vinegary-tart and vinous aftertaste.
