Ilda’s Town Beer
Ilda’s Torr is an evocative Belgian Dubbel that captures the essence of monastic brewing with a deep copper-red hue. The complex malt bill, featuring Pale Ale, Abbey, Munich, Cararoma, and Carabelge malts, delivers a rich tapestry of toasted bread, caramel, and subtle chocolate notes. Fermentation provides essential spicy phenols and dark fruit esters that intertwine with the light floral touch of Goldings hops. While the palate begins with a malty sweetness, the Magnum hops provide a restrained bitterness that leads to a characteristically dry and silky finish. It is a warm, medium-bodied ale that balances traditional complexity with a modern, smooth drinkability.
Appearance. Deep copper to reddish-brown (14–17 SRM) with an attractive ruby depth. Features a large, dense, and long-lasting creamy beige head with excellent lacing; clarity is generally clear.
Aroma. Moderate to high intensity with a rich malt profile of caramel, toast, and light chocolate. Pronounced fruity esters suggest raisins and plums, complemented by moderate peppery and spicy yeast phenols. Low herbal and floral hop character.
Taste. Initial sweet malt impression with layers of caramel and toasted bread. Complexity is added by dark fruit esters and soft spicy phenols. Low to medium-low bitterness maintains a malt-forward balance, finishing moderately dry with a lingering malty and spicy aftertaste.
Mouthfeel. Medium body with a silky, smooth texture and moderate to high carbonation. Well-integrated alcohol warmth is noticeable but gentle, never hot or solventy.
