Ilda’s Santa Hildegarda
Santa Hildegarda is a luxurious, deep brown Doppelbock designed for slow sipping during the winter months. Drawing on historical Munich traditions, it showcases a powerful malt backbone characterized by deep Maillard richness, toasted bread, and subtle layers of dark chocolate. A long maturation process refines the profile, introducing nuanced esters of plum, dark grape, and raisin that emerge as the beer warms. At 8.3% ABV, it provides a gentle, integrated warmth that complements the medium-full, creamy body. This is a celebratory lager where the natural sweetness of the grain is expertly balanced, offering a sophisticated alternative to distilled spirits for post-dinner enjoyment.
Appearance. Dark brown with ruby highlights (SRM 22-25); features a large, creamy, persistent off-white head with excellent lacing and brilliant clarity.
Aroma. High intensity maltiness featuring rich Maillard products, toasted crusts, and distinct notes of milk chocolate; supported by moderately-low dark fruit esters reminiscent of plums and dark grapes. No hop aroma or roasted/burnt character is present.
Taste. Dominant rich, sweet malt flavor with layers of toasted nuts, raisins, and a subtle cocoa finish. Hop bitterness is low, serving only to support the malt dominance. The fermentation is clean, leading to a smooth finish with a lingering bready sweetness that remains well-attenuated and never cloying.
Mouthfeel. Medium-full to full body with a smooth, velvety texture. Carbonation is moderate, providing a gentle lift to the palate, accompanied by a noticeable but soft alcohol warmth that is well-integrated and lacks any harshness.
