Ilda’s Town Beer

Ilda’s Mat is a traditional Weissbier crafted in the Bavarian tradition, pouring a golden yellow with the characteristic haziness of malted Wheat and natural filtration. The aroma is defined by a classic harmony of banana and clove, accented by bright citrus cues. On the palate, a soft base of Pilsner malt supports refreshing notes of mandarin and a subtle tartness. Utilizing Hallertauer hops for a very low bitterness, it concludes with a clean, dry finish. High carbonation creates a fluffy, effervescent mouthfeel, making this an approachable and thirst-quenching interpretation of the classic German wheat beer style.

Appearance. Golden yellow (approx. 3–5 SRM). Thick, creamy, long-lasting white head with dense lacing. Naturally hazy and opaque due to the high wheat content and lack of filtration.

Aroma. Moderate to high intensity featuring classic Weissbier fermentation traits: prominent banana esters and spicy clove phenols. Supporting these are bready, doughy wheat notes and a grainy Pilsner malt sweetness. A subtle, refreshing citrus and mandarin note is present alongside faint herbal Hallertauer hops.

Taste. Initial impression is soft and bready with a grain-sweet wheat profile. This is followed by a balanced interplay of banana and clove. A light mandarin citrus character provides a refreshing acidity. Bitterness is very low, keeping the focus on the yeast and malt. The finish is notably dry and clean without being harsh.

Mouthfeel. Medium body with a signature fluffy and creamy texture. High carbonation provides a spritzy, effervescent, and mouth-filling sensation. Smooth with very light, well-integrated alcohol warmth.
