Ideal Day Life of Plants is a bright, refreshing interpretation of a Straight Sour Beer, leaning into the delicate, rustic structure of a Grisette. This session-strength table beer presents a clean lactic snap that perfectly complements the addition of fresh Lemon Balm. The botanical addition provides a vibrant layer of herbaceous citrusiness and a sense of vitality that dances over a light, crackery malt base. Effervescent and crisp, the profile is defined by its zingy lemon-tartness and a bone-dry finish. It bridges the gap between a traditional farmhouse ale and a revitalizing botanical sour, offering a sophisticated, low-alcohol sensory experience.
Appearance. Very pale straw (2–3 SRM). Brilliant to slightly hazy clarity with a brisk, effervescent pour. Topped by a dense white head that recedes quickly due to the low pH, leaving minimal lacing.
Aroma. Moderate to high intensity. A sharp, clean lactic sourness dominates, leading into bright notes of herbaceous Lemon Balm. Subtle crackery and wheaty malt aromas provide a lean, grainy backdrop. No hop aroma is present, while fermentation esters lean toward tart green apple and fresh lemon zest.
Taste. An initial burst of clean, lemony lactic acidity is met by a light, grainy, and bready malt presence. The Lemon Balm adds a distinct botanical complexity, enhancing the citrus character without adding bitterness. Hop bitterness is undetectable. The finish is exceptionally dry and crisp, with a lingering herbaceous zing and refreshing, tongue-cleansing acidity.
Mouthfeel. Light body with high carbonation that creates a prickly, refreshing sensation. No alcohol warmth is perceived. Crisp acidity provides a clean finish without any harsh astringency or heavy residual texture.
