This modern Witbier presents a vibrant sensory profile that elevates the classic Belgian wheat beer template with a unique herbal twist. The core experience is driven by a bready wheat malt base, providing a soft canvas for the traditional addition of coriander seeds. However, the inclusion of bay leaves introduces a distinctive herbaceous depth, melding seamlessly with the yeast’s zesty, citrusy fruitiness. Effervescent and refreshing, it balances light honey-like malt notes with a dry, crisp finish. The result is a highly aromatic and complex ale where spicy-herbal cues and bright fruit tones dance together for a truly delicious, elevated summer drink.

Appearance. Pale straw to light yellow (SRM 2-3). Characteristically cloudy with a milky, whitish-yellow shine from yeast and wheat starch. Features a dense, white, moussy head with excellent retention.

Aroma. Moderate to high intensity with a bready, grainy malt core and light notes of honey. Prominent perfumy, lemony coriander is accented by the specific savory, peppery, and herbal fragrance of bay leaves. Moderate zesty, orange-citrus fruitiness from fermentation esters; hop aroma is absent.

Taste. Initial impression is refreshingly crisp and bready.
