Ibosim Rosemary Belgian Ale

This Mediterranean-inspired Belgian Ale presents a complex amber hue, drawing depth from a blend of seven barley malts. The sensory profile is defined by the evocative, piney essence of fresh rosemary seamlessly integrated with the bright, citrusy oils of orange peel. On the palate, a balanced sweetness from the rich malt bill supports spicy yeast-derived phenols and the herbal pungency of the rosemary. Subtle hop notes are present but play a supporting role to the botanicals. It captures the essence of rural Ibiza, offering a medium-bodied, harmonious experience that finishes with a lingering, aromatic dry-spice character.
Appearance. Deep amber to copper with excellent clarity. Pours with a persistent, cream-colored head that leaves fine lacing on the glass.
Aroma. Moderate to high intensity. The primary aroma is a fragrant, resinous rosemary bouquet, followed by zesty, sweet orange peel. A rich malt backbone offers notes of toasted bread and light caramel, while Belgian yeast esters provide hints of pear and apricot with a subtle peppery phenol.
Taste. Initial impression of toasted malt sweetness and herbal rosemary. Mid-palate reveals tangy orange peel and fruity Belgian esters. Bitterness is moderate, providing structure against the complex seven-malt base of biscuit and honey. The finish is off-dry with lingering herbal and citrus notes.
Mouthfeel. Medium body with a smooth, slightly creamy texture. Carbonation is moderate to high. Alcohol warmth is light and well-integrated. No significant astringency from the herbs.
