This Belgian Dark Strong Ale presents a sophisticated marriage of monastic tradition and spirit-forward character. A base of rich, bready-toasty barley malt provides a deep foundation for intense esters of fig, date, and dried cherry. The signature profile is elevated by manual vanilla caviar macerated in bourbon for over fifty days, imparting luscious layers of sweet spice and spirituous depth. French oak integration adds structural complexity and toasted notes during fermentation. At nine percent alcohol, the experience is smooth and warming, finishing with a lingering, sweet harmony of dark fruit, vanilla, and refined malt character.
Appearance. Deep coppery-brown to dark amber with excellent clarity. Pours with a huge, dense, moussy, and persistent light tan-colored head that leaves significant lacing on the glass.
Aroma. Intense and complex. Dominant rich maltiness featuring bready-toasty notes and deep caramel. Strong fruit esters of raisin, plum, and dates. Notable vanilla and subtle bourbon-soaked oak presence, complemented by soft, perfumy alcohol and very low spicy phenols.
Taste. Richly malty and complex on the palate with flavors of dark caramel and dried cherries. The vanilla maceration provides a smooth, sweet spice that blends with light bourbon notes and toasted French oak. Bitterness is medium-low, providing balance against the malt-forward profile. Finishes moderately sweet, harmonious, and smooth.
Mouthfeel. Medium-full body with a creamy, luxurious texture. High carbonation that remains smooth rather than sharp. Noticeable but well-integrated alcohol warmth provides a soothing sensation without being harsh.
