The nose is a complex tapestry of peppery phenols and citrus esters woven with earthy wood smoke and a distinct licorice note. Using East Kent Golding and Northern Brewer hops provides a structured herbal bitterness that balances the potent 10.2% ABV. On the palate, the characteristic dryness of a monastic ale prevails, layered with nuanced whisky warmth and a lingering, smoky finish that remains surprisingly effervescent and drinkable.
