Coastal Sunrise (v4) is a vibrant Wild Specialty Beer that reimagines the Indian lassi through a complex lens of tropical fruit and aromatic spice. The sensory experience is dominated by the lush, sun-ripened character of Alphonso mango and the fatty, decadent richness of Indonesian coconut. Planifolia vanilla beans lend a floral, marshmallow-like sweetness that tames the bright lactic acidity, while a distinct infusion of cardamom adds a sophisticated, herbal, and slightly peppery counterpoint. It pours with the opacity of a fruit smoothie, offering a viscous, creamy palate that balances dessert-like sweetness with a refreshing tartness, culminating in a long, tropical, spice-tinted finish.
Appearance. Opaque, vibrant deep gold to orange (SRM 6-8), resembling pulpy mango juice. Pours with a thick, dense, off-white head that shows moderate to low retention due to fruit and coconut oils; some lacing may occur.
Aroma. High intensity aromatics of fresh Alphonso mango and creamy Indonesian coconut. The Planifolia vanilla provides a sweet, aromatic cushion, while the cardamom contributes a sharp, herbal, and slightly camphor-like spicy top note. Malt and hop character are negligible, replaced by a clean, lactic tartness.
Taste. Initial impression is a burst of sweet, fleshy mango followed immediately by the oily, nutty richness of coconut. The cardamom provides a cooling, exotic spice mid-palette that cuts through the fruit density. Moderate lactic acidity balances the residual sweetness. Malt is hidden behind the fruit, and bitterness is virtually absent. The finish is lingering and creamy with a final floral note from the vanilla.
Mouthfeel. Full-bodied and highly viscous with a thick, smoothie-like texture. Moderate carbonation provides enough lift to keep the heavy fruit solids from feeling cloying. Low alcohol warmth. Notable creaminess from the coconut and vanilla addition.
