Hubbard’s Cave Calm Classroom is a masterclass in the classic West Coast-style American IPA, deliberately pivoting away from modern haziness to showcase a brilliant, translucent presentation. The sensory experience is dominated by a vibrant, high-intensity showcase of Mosaic hops. Expect an aromatic explosion of ripe blueberry, sweet tangerine, and tropical papaya, underpinned by a resinous pine backbone. On the palate, a clean, grainy base of pale malts provides a crisp platform for the Mosaic hop oils to express themselves without distraction. It finishes with a firm, assertive bitterness and a bone-dry snap that demands another sip, staying true to its clear-hearted intentions.
Appearance. Brilliant, crystal clear gold to light amber (approx. 7 SRM). Topped by a persistent, fine-textured white head that leaves significant lacing on the glass.
Aroma. High intensity hop-forward aroma featuring dominant Mosaic traits: pungent blueberry, crushed pine needles, and sweet mango. A low, clean, crackery malt note supports the hops, with a very neutral fermentation profile and no detectable diacetyl.
Taste. Sharp, clean initial bitterness followed by intense flavors of grapefruit pith, tropical fruit, and a hint of earthy spice. The malt flavor is restrained and grainy, avoiding heavy caramel. Firm bitterness lingers into a very dry, crisp finish with a refreshing, hoppy aftertaste.
Mouthfeel. Medium-light body with a smooth, non-astringent texture. High carbonation provides a brisk, scrubbing effect on the tongue. A very subtle, well-integrated alcohol warmth is present at 7% ABV.
