Into the Timberstorm is a punchy West Coast IPA that emphasizes a rugged, resinous backbone through a bold hop profile. The classic pairing of Cascade and Chinook delivers signature layers of grapefruit zest and pungent pine needles. This traditional foundation is uniquely enhanced by the addition of the Polish Sybilla hop, which introduces a nuanced layer of floral aromatics and bright citrus fruitiness. The result is an intensely refreshing profile where deep forest resins meet a vibrant, sunny fruit character. With a firm bitterness and a crisp, clean finish, this beer showcases a modern twist on the classic American IPA spirit.
Appearance. Deep gold to light amber (SRM 7-11) with brilliant clarity. Pours with a tall, dense, off-white head that exhibits excellent retention and leaves thick, soapy lacing on the glass.
Aroma. High hop intensity featuring pungent pine resin, grapefruit peel, and subtle spicy notes from the Chinook and Cascade. The Sybilla hop provides a distinctive floral lift and a hint of wild berries. A clean, bready, and slightly nutty grain character provides a supportive but low-intensity base, free of yeast esters.
Taste. An assertive, clean hop bitterness immediately takes center stage, followed by flavors of pine, resin, and citrus zest. The Sybilla hops add a fruity-citrusy and floral tuning to the mid-palate. Malt flavor is low but provides a noticeable grainy and bready foundation that adds complexity to the finish. The balance is decidedly hop-forward, ending with a dry, crisp, and lingering resinous aftertaste.
Mouthfeel. Medium-light to medium body with a crisp, refreshing texture. Carbonation is moderate-high, providing a lively prickle on the tongue. A very light, well-integrated alcohol warmth is present at 6% ABV, without any harsh astringency.
