This Eisbock presents a profoundly concentrated sensory experience, born from a traditional decoction-mashed Doppelbock base and further intensified through freeze-distillation. The result is a monumental display of rich Munich malt character, weaving together deep layers of toasted bread crust, dark caramel, and hints of faint chocolate. Concentrated dark fruit notes of plum and raisin emerge from the clean lager fermentation, harmonizing with a significant yet elegantly integrated alcohol presence. At 15.5%, it offers a luxurious, viscous texture that coats the palate before a warming finish provides a welcome dryness against the immense malt weight.
Appearance. Deep dark brown with brilliant ruby highlights. Clarity is excellent. The ivory head is small with poor retention, typical of the high alcohol content, leaving pronounced legs on the glass.
Aroma. High intensity. Dominated by rich, concentrated malt displaying bready, toasty, and Maillard-rich qualities. Significant dark fruit esters reminiscent of plums and black cherries. Alcohol is prominent but smooth and lacks any solvent-like sharpness. Clean fermentation profile.
Taste. Intense malt sweetness transitions into complex flavors of toasted bread, caramel, and dark fruit. Bitterness is low, serving only to prevent a cloying finish. No hop flavor is present. The alcohol provides a significant presence that balances the malt weight and contributes to a deceptively dry, warming aftertaste.
Mouthfeel. Full and viscous body. Carbonation is very low. Significant and smooth alcohol warmth is present without being harsh. Texture is silky and rich, showing no astringency.
