This sophisticated Brett Beer represents a masterclass in aging, having matured since its 2020 vintage. Originally fermented with Belgian liquid yeast, the profile has evolved through extensive contact with Tokaji Furmint barrels. The result is a bone-dry, complex ale where the spicy phenols of the Belgian yeast merge seamlessly with the oxidative, honeyed mineral notes of the Hungarian white wine casks. Distinctive aromas of dried apricot and pear are balanced by a rustic, earthy funk and a structural oak presence. The Brettanomyces has thoroughly attenuated the body, leaving a lean, vinous character that highlights both the wood and the sophisticated yeast interplay.

Appearance. Deep gold to amber (7–9 SRM) with a slight haze consistent with aged wild ales. Pours with a moderate white head that shows fair retention, leaving thin lacing on the glass.

Aroma. High intensity with a complex layering of funky barnyard, wet hay, and leather from the Brettanomyces. Notable esters of dried stone fruit and apricot are present from the Belgian liquid yeast, complemented by the distinct vinous character of honey and white grape from the Tokaji Furmint barrels. Subtle spicy clove and white pepper phenols linger in the background.

Taste. Initial impression is bone-dry and crisp. Flavors of tart lemon peel and grapefruit skin transition into deeper notes of oak tannins and earthy funk. The Tokaji Furmint barrel influence provides a nuanced fruitiness reminiscent of apricot and minerals. Hop bitterness is low, allowing the high attenuation and light acidity to provide balance.
