Hopsium Süsimust IPA is a striking Black IPA that captures the essence of the Nordic polar night. The sensory experience is led by a sophisticated hop profile where the resinous depth of Columbus meets the bright citrus of Citra and the unique crushed gooseberry notes of Nelson Sauvin. These vibrant hops cut through a dark, midnight-hued body supported by specialty malts that offer subtle hints of dark chocolate and toast without any harsh, burnt astringency. The result is a mysterious yet balanced ale, balancing piney bitterness with a clean, dry finish that brightens the palate during the darkest months.
Appearance. Opaque, deep ebony to coal black (SRM 35-40). Pours with a persistent, creamy, light tan head that leaves significant lacing on the glass.
Aroma. High intensity hop aroma featuring resinous pine, grapefruit zest, and a distinct white wine or gooseberry character. A supportive, low-intensity malt backdrop provides clean notes of cocoa and toasted bread. Fermentation is clean with very low tropical esters.
Taste. Bold initial hop impact of pine and tropical fruit, followed by a restrained, smooth malt profile of dark chocolate and light-roast coffee. The bitterness is firm and medium-high but never harsh. The Nelson Sauvin hops add a sophisticated fruity complexity to the mid-palate. Finishes dry and crisp with a lingering resinous and slightly roasted aftertaste.
Mouthfeel. Medium body with a smooth, velvety texture. Moderate carbonation provides a crisp bite. A gentle alcohol warmth is present but well-integrated, consistent with the 6.9% ABV. Low creaminess and no roasted astringency.
