Clean Cut is a modern take on the American IPA, emphasizing a lean, pale malt structure devoid of caramel influence. Fermented with lager yeast at ale temperatures, it provides an exceptionally crisp and neutral canvas for an intricate hop showcase. The sensory profile is driven by a vibrant blend of new-wave and classic hops. Tropical aromas of pineapple and mango from El Dorado and Azacca merge with bright Citra citrus and Idaho 7 stone fruit. Chinook and Columbus provide a foundational resinous pine and subtle spice, culminating in a sharp, lingering bitterness and a dry, refreshing finish characteristic of the West Coast style.
Appearance. Pale gold to medium gold (approx. 5-7 SRM). Brilliant clarity with a medium-sized, white, persistent head that leaves fine lacing.
Aroma. High hop intensity featuring a complex bouquet of tropical fruit, grapefruit, and apricot, supported by a distinct resinous pine and light herbal spice. Malt is low and clean, presenting as fresh crackers. Fermentation is exceptionally clean with no perceptible esters.
Taste. Leading with a punch of tropical and citrus hop flavors, the palate follows with notes of mango, lime, and resinous pine. The malt flavor is low and neutral, providing a light grainy support without any sweetness. Bitterness is firm and medium-high, leading into a very dry, crisp finish with a lingering hoppy aftertaste.
Mouthfeel. Medium-light body with a smooth, crisp texture. Carbonation is medium-high, enhancing the dry finish. Alcohol warmth is very low and well-integrated; no astringency.
