C’est La Vie is a session-strength Table Saison that embraces the rustic, unpredictable nature of farmhouse ales. At a refreshing 4% ABV, it presents a delicate balance of zesty citrus and stone fruit esters alongside a signature cracked black pepper phenolic bite. The malt profile is lean and crackery, allowing the spicy and floral continental hop character to shine through. Highly effervescent and exceptionally dry, this Saison delivers a crisp, lean profile that emphasizes drinkability while maintaining the sophisticated yeast-driven complexity typical of the style. It is a light, vibrant expression of traditional Belgian brewing roots.
Appearance. Pale straw to light gold (4–5 SRM). Topped by a dense, rocky, long-lasting white head with significant Belgian lacing. Unfiltered with a slight to moderate haze and visible effervescence.
Aroma. Moderate intensity featuring a blend of lemon zest, green apple, and white pepper. A light, grainy malt sweetness underpins floral and earthy hop notes. Clean fermentation profile with no diacetyl or sulfur.
Taste. Initial impression is brisk and dry. Soft, grainy malt flavors lead into a mid-palette of spicy yeast phenolics and subtle pear-like esters. Hop bitterness is moderate but assertive due to the very high attenuation, finishing bone-dry with a lingering peppery and floral aftertaste.
Mouthfeel. Light-bodied and highly carbonated. The high effervescence provides a prickly, refreshing sensation on the tongue. Zero alcohol warmth, reflecting its table-strength gravity. Very crisp and clean.
