This Wild Specialty Beer is a vibrant, sensory exploration of exotic botanicals and wild fermentation. The profile is dominated by a sharp, lactic acidity that carries the complex, perfume-like aromatics of feijoa, blending notes of pineapple and strawberry. Calamansi provides a bracing, lime-like citrus punch, while pink cactus adds a subtle, earthy melon undertone. The addition of spirulina lends a visually striking character. The wild fermentation introduces a layer of funk that integrates seamlessly with the tropical fruit purees, resulting in a tart, refreshing, and incredibly unique ale that challenges the palate with its bold, festive complexity and dry finish.

Appearance. Striking and unusual; the spirulina and fruit purees create a hazy, deep teal to emerald green hue. It features a thin, pale green-tinted head with quick dissipation and minimal lacing typical of acidic fruit beers.

Aroma. High intensity aromatics lead with sharp calamansi citrus and the distinct, tropical perfume of feijoa. Underlying notes of earthy cactus pear are complemented by a moderate lactic sourness and a faint, leathery wild yeast funk characteristic of American wild fermentation.
