Aging on Castanheira wood chips imparts a highly unique, aromatic woody complexity characterized by soft toasted nuttiness and delicate exotic spice notes. Appearance. Deep amber to dark reddish-brown with brilliant clarity. Pours with a moderate, cream-colored head that exhibits average retention and leaves light lacing on the glass.
Aroma. Moderate to high malt-forward aroma featuring rich notes of dark caramel, toasted sourdough bread, and toffee, intertwined with distinctive woody and nutty accents from Castanheira wood. Low to moderate dark fruit esters resembling dried plum and raisin are present, with a very subtle, clean alcohol note. Hop aroma is absent.
Taste. Initial impression reveals a luscious, complex malt sweetness characterized by dark caramel, molasses, and a unique rustic sourdough breadiness. This is closely followed by a pleasant, nutty, and exotic woody flavor derived from the Castanheira wood chips. Low to moderate bitterness provides structure but keeps the balance decidedly malty. Moderate dark fruit esters add complexity. The finish is balanced-sweet with a very light, pleasant wood-derived tannin and a lingering nutty aftertaste.
Mouthfeel. Medium-full, chewy body with a smooth, slightly creamy texture. Carbonation is low to moderate, offering a soft mouthfeel. A light, pleasant alcohol warmth is present, accompanied by a very mild, non-astringent wood tannin dryness.
