Hop Hooligans

This 5% ABV Saison presents a delicate, pastoral profile centered on the unique addition of Wild Thyme. Built on a soft, rustic base of Heidelberg malt, Golden Promise, and Torrefied wheat, it offers a grainy, cracker-like foundation that supports the LalBrew Farmhouse yeast's peppery phenols. The Wild Thyme introduces a distinctive herbal complexity, reminiscent of sweet incense and sun-warmed meadows, which weaves through light stone fruit esters. It is a contemplative, highly attenuated ale with an effervescent character and a bone-dry finish, successfully balancing herbal savoriness with a refreshing, rustic charm typical of a Belgian farmhouse ale.

Appearance. Pale straw to gold (5-6 SRM). Topped by a voluminous, frothy white head with excellent retention and intricate Belgian lacing. Unfiltered and slightly hazy due to the torrefied wheat.

Aroma. Moderate to high intensity. Bright peppery and spicy yeast phenols from the Farmhouse yeast blend with a unique herbal fragrance of Wild Thyme, giving an impression of dried flowers and incense. Low grainy malt notes of fresh crackers and soft wheat. Subtle esters of lemon peel and unripe pear.

Taste. Initial impression is dry and crisp. Soft, grainy malt flavors from Golden Promise and Heidelberg malt provide a rustic backbone. The Wild Thyme translates as an earthy, floral herbiness that complements the spicy, black pepper fermentation profile. Hop bitterness is moderate but assertive, clearing the palate quickly. Finishes very dry and clean with a lingering herbal and spicy aftertaste.

Mouthfeel. Medium-light body with very high carbonation, creating an effervescent, prickly sensation. No alcohol warmth is detected. Very high attenuation leads to a crisp, refreshing mouthfeel with no astringency.
