This decadent Imperial Stout presents a sensory journey inspired by the Pavlova dessert, built on a complex grain bill including Chocolate malt, Roasted Barley, and Red Rye Crystal. The base delivers deep layers of cocoa and toasted bread, which are transformed by the addition of Strawberry, Raspberry, and Blueberry into a vibrant, jammy profile. Creamy Lactose and aromatic Vanilla provide a luscious sweetness that mimics meringue and whipped cream. The use of WLP002 yeast adds subtle stone fruit esters, while the 11% ABV provides a soothing warmth that balances the intense berry tartness against a velvety, full-bodied malt backbone.
Appearance. SRM 40; jet black and completely opaque. It features a thick, persistent deep tan head with moderate lacing. High viscosity is evident through visible legs on the glass.
Aroma. High intensity with a complex blend of raspberry and strawberry preserves over a rich base of dark chocolate, espresso, and vanilla. Subtle blueberry notes and a creamy lactose sweetness are present, supported by a deep roasty malt character with hints of spicy rye. Low hop aroma and moderate fruity esters.
Taste. Initial impression is a rich mix of dark fruit preserves and bittersweet chocolate. The malt profile offers flavors of coffee and toasted nuts from the black and brown malts. Bitterness is moderate but balanced by significant lactose and vanilla sweetness. Strawberry and raspberry provide a bright, slightly tart counterpoint to the heavy malt. The finish is long and lingering with a pleasant alcohol warmth and berry skin tannins.
Mouthfeel. Full-bodied and chewy with a velvety, luscious texture. Carbonation is low to moderate, enhancing the creaminess provided by flaked oats. A smooth, noticeable alcohol warmth is well-integrated into the finish.
