Jackalope is a vibrant Double IPA that bridges the gap between West Coast structure and modern fruit intensity. Brewed with a clean base of Pilsner, Heidelberg, and Wheat malt, it presents a lean, crackery foundation for an explosive hop profile. Citra and Sabro lead the charge with lush mango and distinct coconut cream, while a heavy dry-hop of BRU-1 Lupomax, HBC630, and Talus introduces ripe pineapple and delicate floral nuances. Despite its tropical juiciness, this hybrid style maintains a firm, bittersweet pine resin finish. The alcohol is well-hidden behind a wall of modern hops, resulting in a complex, high-impact sensory experience.
Appearance. Pours a pale gold to light orange (SRM 5-7). Features a moderate-sized, persistent white head with good lacing. Clarity is mostly clear with a slight, modern haze consistent with the heavy dry-hopping.
Aroma. Intensity is high, dominated by a complex bouquet of ripe pineapple, mango, and tropical stone fruit. Distinct notes of coconut and soft floral blossoms are present, supported by a very low, neutral, grainy malt character and clean fermentation profile.
Taste. Initial impression is a wave of tropical fruit including pineapple and mango. The mid-palate reveals Sabro-driven coconut cream and subtle floral tones. Malt flavor is low and unobtrusive, providing a soft, grainy support. Bitterness is firm and assertive, leading into a bittersweet finish characterized by lingering pine resin. The finish is medium-dry and clean.
Mouthfeel. Medium-bodied with a smooth, slightly creamy texture from the wheat and dextrin malt. Carbonation is moderate. A gentle, well-integrated alcohol warmth is present, without any harshness or hop-derived astringency.
