This contemporary Saison offers a layered sensory journey, blending rustic grains with vibrant botanicals. The base of Heidelberg and Vienna malts, softened by flaked oats and wheat, provides a delicate, grainy backdrop for the expressive Wyeast 3711 yeast. High-intensity aromas of ripe peach and apricot intertwine with the peppery, spicy phenols characteristic of the style. A distinctive herbal thread of fresh basil lifts the profile, while a subtle addition of Maldon smoked salt adds a nuanced mineral complexity. The finish is remarkably dry and effervescent, leaving a lingering impression of stone fruit skin and peppery herbal spice.

Appearance. Pale orange-gold with a hazy clarity. Features a long-lasting, dense, rocky white head with significant Belgian lace.

Aroma. High intensity. Dominant esters of ripe peach and apricot are balanced by peppery, spicy phenols from the French Saison yeast. Soft, grainy malt notes from Heidelberg and Vienna malts are present. Distinctive fresh basil provides an herbal lift, with a subtle mineral quality from the salt.
