This Double IPA showcases a complex, modern hop profile anchored by a base of Extra Pale malt and Malted oats for a smooth, pillowy texture. Columbus and Centennial provide a classic resinous and floral foundation, while Simcoe adds layers of pine and passionfruit. The addition of Ekuanot, Idaho 7, and Talus drives intense aromas of pink grapefruit, dried rose petals, and tropical stone fruit. The Cara Pils malt contributes a subtle body that supports the high hop intensity without cloying. It balances a firm bitterness with a clean, dry finish, exploring both deep, dank roots and soaring, bright citrus peaks in a vibrant sensory journey.
Appearance. Gold to light orange-copper (6-9 SRM) with a moderate-sized, persistent white head. Features good clarity, though the use of malted oats contributes a very slight, acceptable haze.
Aroma. Intense hop aroma characterized by resinous pine, grapefruit, and floral blossoms. Secondary notes of tropical stone fruit, melon, and a hint of sage. The malt presence is neutral, clean, and slightly grainy, with a very low fruity fermentation profile and well-integrated alcohol.
Taste. Strong, complex hop flavors dominated by citrus zest, pine resin, and tropical fruit. Bitterness is high but smooth, avoiding harshness. A clean, soft malt character provides a brief supportive sweetness before transitioning into a dry, lingering finish with a crisp, hoppy aftertaste.
Mouthfeel. Medium body with a smooth, slightly creamy texture from the oats. Carbonation is moderate-high. Features a restrained, smooth alcohol warmth appropriate for the strength, with no hop-derived astringency.
