Hop Hooligans

Higher Peaks is a monumental Imperial Stout that reaches sensory heights with a massive grain bill featuring Golden Promise and Oat malt for a luxurious, sturdy foundation. Intense aromas of bittersweet cocoa and creamy vanilla dominate the profile, driven by the generous addition of cocoa nibs and vanilla. Dark specialty malts like DRC and Chocolate malt provide deep layers of espresso, scorched caramel, and dark fruit. Despite its 12% ABV, the clean fermentation allows the decadent, dessert-like flavors to shine against a backdrop of roasted barley bitterness, culminating in a velvety, warming finish that mirrors its high-altitude namesake.

Appearance. Jet black and opaque (SRM 40+). Pours with a thick, persistent deep tan head that leaves dense lacing. High viscosity is apparent, forming visible legs on the glass.

Aroma. High intensity. Dominant notes of dark chocolate and aromatic vanilla. Supporting malt character of toasted bread, dark caramel, and a sharp espresso roast. Subtle dark fruit esters of raisin and plum. Hop aroma is negligible. Clean fermentation profile with no distracting phenols.

Taste. Initial decadent sweetness of vanilla and milk chocolate, quickly countered by a complex malt bitterness. Flavors of baker's chocolate, charred grain, and black coffee persist throughout. Moderate-high bitterness balances the residual sugar and heavy malt weight. The finish is long and warming with lingering notes of cocoa and roasted barley.

Mouthfeel. Full to very full-bodied with a thick, chewy, and velvety texture. Carbonation is low to moderate. Noticeable but smooth alcohol warmth provides a pleasant, well-integrated glow without being harsh or solventy.
