Hop Hooligans

This modern Weissbier challenges tradition by marrying the classic profile of WLP300 yeast with a bold dry-hopping of Polaris hops. It pours with a characteristically hazy appearance, leading with intense aromas of ripe banana and spicy clove supported by a grainy, bready malted wheat base. The Polaris hops introduce a unique cooling, minty, and floral herbal character that weaves through the yeast esters. On the palate, soft doughy sweetness meets a refreshing, effervescent finish. This fusion creates a vibrant, fluffy sensory experience where old-world spice meets new-world hop intensity, resulting in a complex yet drinkable interpretation of the style.

Appearance. Pale straw to gold in color (3-4 SRM). Features a very thick, moussy, and long-lasting white head with significant lacing. Hazy and opaque with a visible yeast and wheat protein cloudiness.

Aroma. High intensity. Strong esters of ripe banana and spicy phenols reminiscent of clove from the WLP300 yeast. This is layered with a moderate bready, doughy malted wheat character and a distinctively fresh, minty, and herbal hop aroma from the Polaris dry-hop.

Taste. Initial soft, grainy-sweet wheat flavor followed by a balanced presentation of banana and clove. The Polaris hops provide a unique herbal and cooling minty flavor that contrasts with the doughy malt. Low bitterness, leading to a relatively dry and highly refreshing finish. No bubblegum or smoke notes.

Mouthfeel. Medium body with a characteristic fluffy and creamy fullness. High carbonation provides a spritzy, effervescent mouthfeel. No alcohol warmth or astringency.
