Chef De Chef is a powerhouse Double IPA that pushes the boundaries of the style with an imposing 11% ABV. The sensory profile is dominated by a complex hop quartet; Strata and Meridian deliver a vibrant explosion of tropical passion fruit and sweet berry notes, while Centennial and Columbus anchor the experience with sharp citrus and deep, resinous dankness. Built on a clean foundation of Heidelberg malt and thinned with dextrose for drinkability, the beer offers a dry, bracing finish. Noticeable but smooth alcohol warmth supports the intense hop bitterness, creating a bold, heady experience defined by high modern hop saturation.
Appearance. Deep gold (7 SRM) with a moderate, white, persistent head and fine lacing. Generally clear, though a light haze from heavy dry-hopping is present.
Aroma. High intensity; pungent tropical notes of passion fruit and strawberry are followed by lemon zest and a heavy resinous dankness. A neutral, grainy malt character supports the hops; fermentation is clean with a noticeable but smooth, non-solventy alcohol presence.
Taste. Strong hop flavors of grapefruit, berry, and pine lead into a firm, aggressive bitterness that defines the palate. The malt presence is low and crackery, allowing the hops to remain the focus. It features a very dry finish with a lingering, clean hop bitterness and a smooth alcohol warmth.
Mouthfeel. Medium-full body with a smooth, almost velvety texture. Moderate carbonation provides a gentle lift, while significant alcohol warmth is present without being harsh or astringent.
