Brain Glaze is a decadent, gourmet interpretation of a Gose, weaving together rich, dessert-like layers with a sharp, refreshing core. The foundation of Munich malt and Wheat malt provides a bready, doughy base that supports a complex array of jammy, caramelized figs and honey-dipped walnuts. These earthy and sweet elements are brightened by a zingy, lactic tartness from the fermentation and a hefty dusting of sea salt that creates a savory, mouthwatering trail mix finish. It is a bold, high-contrast experience where the salinity amplifies the nutty and fruity richness while maintaining the effervescent character of the classic German style.

Appearance. Deep gold to amber (7–12 SRM), displaying a moderate to full haze. Pours with a dense, off-white head that shows moderate retention and light lacing; highly effervescent.

Aroma. High intensity; sharp lactic sourness melds with rich, jammy fig and a distinct nutty walnut character. Subtle floral honey sweetness and a hint of mineral sea salt are present, underpinned by a bready, doughy malt profile. No hop aroma.

Taste. Initial impression is a vibrant tug-of-war between lactic tartness and honeyed sweetness. Deep flavors of caramelized fig and earthy walnut dominate the mid-palate.
