HOMES Brewery MINGLE (2024) is a complex Wild Specialty Beer that artfully balances vibrant fruit additions with an intricate spice profile. The sensory experience is led by a deep blend of succulent strawberry, tart cherry, and jammy plum, creating a layered red fruit character. Vietnamese cinnamon provides a warm, woody aromatic depth that weaves through the lactic tang of the wild fermentation. Despite the underlying acidity typical of an American wild fermentation, the addition of milk sugar rounds out the mouthfeel, offering a creamy, dessert-like counterpoint to the bright fruit acidity. It is a harmonious marriage of rustic funk and culinary-inspired sweetness.

Appearance. Pours a deep reddish-purple to magenta hue (15–20 SRM) with a slight to moderate haze from the heavy fruit additions. The head is pink-tinted with moderate to low retention, typical for acidic styles, leaving minimal lacing.

Aroma. High intensity aromatics featuring a dominant bouquet of jammy strawberry and dark cherry complemented by floral plum notes. Vietnamese cinnamon offers a distinct, spicy, and slightly sweet bark-like aroma. A clean lactic sourness and subtle earthy funk provide a sharp, rustic backbone, while a hint of creamy sweetness from the milk sugar lingers.

Taste. Initial impression of tart red fruit, with cherry and plum providing a tangy acidity softened by the milk sugar. Strawberry adds a fleshy, sweet-fruit depth. Vietnamese cinnamon provides a spicy warmth and woody complexity through the mid-palate. Bitterness is negligible, allowing the interplay between fruit acids and residual lactose sweetness to define the balance. The finish is lingering and fruity with a soft, creamy aftertaste.

Mouthfeel. Medium body, which is notably fuller than a standard wild ale due to the unfermented milk sugar. Carbonation is moderate, providing enough lift to prevent the fruit and lactose from becoming cloying.
