This Berliner Weisse presents a lush, dessert-forward interpretation of the classic style, elevated by a significant fruit addition and culinary adjuncts. Vibrant peach dominates the foreground, offering a juicy stone-fruit sweetness that contrasts with a sharp, clean lactic acidity. Vanilla bean contributes a smooth, aromatic layer of custard and spice, while the addition of corn flakes provides a distinctive toasted cereal note, mimicking the buttery crust of a peach crumble. Despite its higher strength, the wheat-heavy grist maintains a doughy backbone, resulting in a complex profile where tart fruit, creamy vanilla, and bready grains finish with a refreshing, high-carbonation snap.
Appearance. Hazy, pale orange-gold (4–6 SRM) reflecting the peach addition. Features a moderate, dense white head with fair retention, exhibiting some lacing despite the adjunct oils.
Aroma. High intensity. A sharp, clean lactic sourness is immediately evident, followed by a rush of ripe, sun-drenched peach. Vanilla bean adds a floral, creamy sweetness that blends with a raw bread dough wheat character and a unique, toasted cereal note.
Taste. Dominant lactic sourness provides a tart initial impression. Vibrant peach fruitiness follows, balanced by a soft, bready malt sweetness and the distinctively grainy flavor of corn flakes. Vanilla bean rounds out the middle, adding a creamy complexity. Hop bitterness is undetectable, with the tart finish providing balance. Ends with a lingering peach-custard aftertaste.
Mouthfeel. Medium body, fuller and more viscous than a traditional example due to the 6% ABV and adjuncts. High carbonation provides a crisp, effervescent bite. A smooth creaminess is present, accompanied by a very light, well-integrated alcohol warmth.
