The Wild Rose by Holy Mountain Brewing delivers a vibrant sensory experience, blending the rustic grain character of LINC Malting's Steffi Pilsner, Buzz Pale Malt, and Oat Malt. This American IPA bursts with high-intensity aromas of passionfruit and citrus, driven by a strategic blend of Strata and Citra hops, further intensified by a Citra Cryo dry hop. Resinous pine and spice from Chinook provide a firm counterpoint to the tropical fruit. Fermented with a characterful English yeast, the palate is bright and dry, featuring a clean bitterness that lingers against a smooth, grainy malt backdrop and subtle fruity esters.
Appearance. Medium gold with a slight haze from the addition of oat malt. Topped with a medium-sized, persistent white head that exhibits excellent lacing.
Aroma. High intensity hop aroma featuring prominent notes of passionfruit, grapefruit, and mango from the Strata and Citra hops, balanced by resinous pine and light spice from Chinook. A low, clean, grainy maltiness supports the hops, accompanied by subtle fruity esters from the English yeast.
Taste. High hop flavor echoes the aroma with citrus zest, tropical fruit, and a hint of berry. The malt profile is clean and grainy with light toasted notes from the Buzz Pale Malt. Bitterness is firm and medium-high, leading into a dry, crisp finish. A lingering hoppy aftertaste remains clean without harshness.
Mouthfeel. Medium body with a smooth, slightly creamy texture attributed to the oat malt. Moderate-high carbonation provides a crisp bite, while a very light, smooth alcohol warmth is present on the finish.
