Holy Mountain Brewing Five of Swords
This American IPA, a collaborative effort with E9 Brewing Co., delivers a bright and hop-saturated experience. The use of oats creates a smooth, rounded texture that carries an aggressive hop profile. Citra and Mosaic contribute vibrant grapefruit and tropical mango notes, while Centennial and Simcoe provide a classic floral and resinous pine foundation. The sensory profile is defined by this complex hop layering over a clean, neutral malt base. It finishes crisp and dry, with the firm bitterness expected of the style, perfectly balanced by a clean fermentation that allows the hop oils to remain the focus.
Appearance. Medium gold with a slight haze from the oat addition. Features a medium-sized, persistent white head with excellent lacing.
Aroma. High intensity hop aroma with dominant notes of grapefruit, pine resin, and tropical melon. A low, clean, grainy maltiness supports the hops. Clean fermentation with no significant yeast esters.
Taste. Initial impression of bright citrus and pine, followed by a firm, medium-high bitterness. Citra and Centennial provide grapefruit peel flavors while Simcoe adds a resinous depth. The malt is clean and supportive with a light bready note from the oats. Finishes dry and hoppy with a lingering bitter aftertaste.
Mouthfeel. Medium body with a smooth, slightly creamy texture from the oats. Moderate-high carbonation provides a lively mouthfeel. No harshness or astringency, with only a very light, well-integrated alcohol warmth.

Five of Swords is our annual IPA brewed in collaboration with our friends at E9 in Tacoma, WA. This year’s batch was brewed with Two Row, Pilsner Malt, and Spelt. It was hopped aggressively in the kettle and the dry-hop with Idaho 7 and Strata, then ran through whole-cone Mosaic and Simcoe in our hop back on the way to the tank. We’re super happy with how the batch came out this year, and as always, we had a blast brewing with our friends from one of our favorite breweries.
